Empanadas are stuffed pastries with fillings such as onion, cheese, spinach, corn, and potato.

Tostadas meaning “toasted”.in Spanish. In Mexico some local dishes which are toasted or use a toasted ingredient are called tostadas.

Sopes are small disks of thick fried masa dough with pinched sides to keep the toppings on top like cheese, beans and squash blossom.

Flautas are tortillas filled, rolled and deep-fried. Vegetarian fillings are potato or cheese, and they are usually topped with crema, salsa, lettuce and cheese.

Enchiladas are rolled tortillas, filled with vegetables or panela cheese and covered with salsa.

Mexico is in general a meat focused country like Latin America and vegetarianism isn’t mostly appreciated or widespread, but luckily vegetarian ingredients like corn tortillas, beans, cheese, and vegetables feature in many dishes make Mexico a vegan paradise.
