Dieser hervorragende Ruf ist wohl weitgehend auf die Einstellung zurückzuführen, die die Franzosen zum Essen haben. Sie schätzen und bewundern ihr Land und die Früchte, die es liefert. Und sie setzen ihren ganzen Stolz darein, diese Produkte in kulinarische Genüsse umzusetzen.    AusschlieÃ?lich Zutaten von hervorragender Qualität sind die Basis dieser Küche. Deshalb sollte man stets die frischesten Früchte und Gemüse, das beste Fleisch, den hochwertigsten Fisch und die edelsten Molkereiprodukte verarbeiten. Auch wenn man ein Gericht noch so gut zubereitet, wird es nie vollkommen schmecken, wenn man minderwertige Zutaten verwendet.   Saucen müssen so mild sein, dass sie die Eigenart eines Gerichtes unterstreichen, aber keinesfalls überdecken. Es muss immer möglich sein, jede einzelne Ingredienz aus einem Gericht herauszuschmecken. Der Philosoph der Küche Jean-Anthèlme de Brillat-Savarin (1755-1826) war es, der in seinen geistvollen Theorien über die Tafelfreuden einmal behauptete, dass gute Küche aus nichts als “Eiern, Sahne, Butter und Genie” bestünde.  Diese Auffassung spiegelt sich in hohem MaÃ?e noch heute in der französischen Küche wieder.    Es wäre jedoch falsch, wenn man behaupten wollte, dass die verschiedenen Trends, die in den letzten Jahren durch die Küche hindurchgegangen sind, keine Spuren hinterlassen haben: Heute hat man ganz andere Essgewohnheiten als früher – man isst weniger, verwendet weniger Fett und man hütet sich vor Salz und Zucker. Man achtet auf sich, obwohl in MaÃ?en das Bessere nie ein Feind des Guten war. Das gute Schmorgericht, das mit Sorgfalt und Liebe zubereitet wurde, ist Widererwarten nicht auf der Strecke geblieben, obwohl sich das Fast food immer weiter ausbreitet. Zudem versuchen diverse Kochsendungen im Fernsehen, mitsamt ihren sogenannten Profiköchen, die traditionelle Küche zu verdrängen. Die einzige “Kunst” oder wollen wir es “Können” dieser Profis nennen, besteht darin, ein Gericht übermäÃ?ig zu salzen bzw. zu versalzen. AuÃ?erdem kreieren diese Schaumschläger immer gewagtere Beilagen oder Neuinterpretationen klassischer Gerichte, um den ambitionierten Hobbykoch zu verunsichern. Demzufolge ist es umso bemerkenswerter, dass es der Tradition nie besser ging als vorher, denn in alten Töpfen kochen immer noch die besten Gerichte.  Peter R. I visited every pier on the west coast on a motorcycle; over 100 of them. Passing within feet of gigantic aircraft carriers, I crossed incredible bridges that launched the bike airborne; beheld beautiful castles in the sky and slept serenely on Crystal Pier as the ocean rushed beneath me. Historically, piers embraced great sailing ships, welcoming goods and people from exotic lands. Whether bearing silks of China or rum from the Caribbean, this was its Ports O’Call. Those days are long gone yet the memories echo on and it’s still somewhere close to far away. Standing at the end of a pier high above an azure sea, a cool breeze blows by. The rumbling surf pounds the shoreline with bubbling fists and I am riding. The whole of the Pacific Ocean is racing toward me and I am riding on it.

Rather than dwelling on the successes achieved along the way, the many mistakes made throughout the half-century journey are highlighted. They are often comical. Without exception, each mistake became a building block, some even a cornerstone, in creating the foundation of a professional award-winning travel organization that has as its business credo, “Small Town Caring – Worldwide.”

Mistakes – or the fear of making them – should never be a deterrent to experiencing what awaits when one travels. It’s possible to travel the world, instead of having to ever say, “I wish I would have.”

Everyone has a desire to travel, oftentimes muted, but real nevertheless. As such, each of us fits into one of three categories: those who want to travel, but can’t because of financial or mental/physical incapacities; those who want to travel, but suppress the desire, sometimes almost beyond recognition, for fear of the unknown or of making mistakes; and those who want to, and do, travel. The goal of the author is to motivate the reader to continue in – or to move into – the latter category and to realize a good measure to consider when staying in – or moving into – the preferred category is, “If it doesn’t take food from your table or shelter from your head” there’s no reason not to reward yourself and loved ones – with travel and all other desires.
